How do you backup...

Nightly. The SQL files are then uploaded to our web server (inaccessible to the public of course) on a separate machine. The SQL file is also stored locally on the machine if I need to do a fast restore (i.e the hard drives are fine, the MySQL database was the only thing to go south)

That's what I use for everything, for $30.00 a month you can backup until your face turns blue.

 

I've had zero downtime. Full 10mbit speeds and unparalleled support for going on 5-6 months of my use of that service.

 

Also look into there VPS's for DNS hosting. Super high uptime on those as well, and there all redundant in ways most of us can't afford so its a great DNS storage device as well.
